Unlike every other version of Anthology, this one does have Samurai Shodown V Special. Well, kind of.

Samurai Shodown V Special

Hidden among the data files for Samurai Shodown 1-5 is a file called SHO5S.POD, which contains the data for Samurai Shodown 5 Special. This was likely cut due to the controversy surrounding finishing moves involving gruesome decapitations and cutting up of the opposing fighter (and SNK's shoddy attempt to censor such content, which resulted in bugs and subsequent recalls of AES cartridges).

Using a tool like UMDGEN, the game can be told to redirect Samurai Shodown V's listing on the main menu to Samurai Shodown V Special's data. The game boots, but the incorrect tileset data is loaded (or incorrectly mapped, at least), leading to garbled graphics.
